Why do we burn a death body not bury them?

It is to release the soul from the earth plane. If the person who dies is not very strong in their meditative mind, they will be confused after they leave their physical body. They might try to find the thing they are most familiar with, which is their own body. If they try to stay with their body, they won't leave the earth plane and they will become a ghost. We burn the body so there is no chance of them staying with it. Then it is much easier for them to understand that they have to leave.
