In 3rd Guru's time, a king came to visit Guru Amar Das. The Guru wouldn't give him an audience UNTIL the king had humbled himself by eating in the langar lines, which as you know put people of different castes sitting next to one another. The king resisted at first but since Guru wouldn't change his mind,the king did as he was asked before he could have audience with Guru. After that, Sikhs who came for Guru's darshan would sit in Pangat before visiting Guru, to show their love and respect for Guru.
Nowadays this is unnecessary. Pangat is a part of being Sikh and a part of our practice, but there it is not a requirement that one must sit in Pangat before they can join the Sangat.
